Recipe of the Season - Fall 2007

Country tart with Swiss cheese

Makes 1 Tart for 8 People

    Tart Shell
  • 8 oz quiche dough
  • Shape a 8 inches tart ring, cook it blind in preheated oven at 350° F
    Garnish
  • 2oz mushroom
  • 2 oz onion
  • 2 oz bacon
  • 2 oz leeks
  • 3 oz swiss cheese
  • Sauté separately the oinion, bacon, leeks, mushroom
  • Garnish the shell with the vegetables and the cheese
    Custard
  • 3 Eggs
  • 3 oz milk
  • 3 oz cream
  • Salt, pepper, coriander
  1. To make the custard , blend eggs milk cream salt pepper and coriander together
  2. Pour the custard over the vegetables and cheese, bake at 350°F until the custard becomes golden in color (approximately 30 minutes)
  3. Blend, add the vegetables, cheese and flan in the precooked tart shell
