What will I study while enrolled in an associates degree program?

The AAS degree programs consists of the following training for a total of 60 weeks of fast-track day classes (100 weeks in the evening).

What are the requirements for the AAS degree program?

  • Complete all portions of the application (with one photo I.D.).
  • Request and receiving appropriate educational transcripts.
  • Pay $50 non-refundable registration fee (for new students only).
  • Pay $50 non-refundable enrollment fee.
  • Complete TSI test, if applicable to you (Texas Success Initiative).
  • Meet with the Admission Counselor.
  • Meet with the Registrar.
  • Provide a medical certificate (proof that you are physically able to stand in a kitchen for 6 to 7 hours a day).

Is it possible to be exempt from the TSI test?

The following students shall be exempt from the requirements of this title:

  • For a period of five (5) years from the date of testing, a student who is tested and performs at or above the following standards:
    • (A) ACT: composite score of 23 with a minimum of 19 on the English test and/or the mathematics test shall be exempt for those corresponding sections;
    • (B) Scholastic Assessment Test (SAT): a combined verbal and mathematics score of 1070 with a minimum of 500 on the verbal test and/or the mathematics test shall be exempt for those corresponding sections; or
  • For a period of three (3) years from the date of testing, a student who is tested and performs on the Texas Assessment of Academic Skills (TAAS) with a minimum scale score of 1770 on the writing test, a Texas Learning Index (TLI) of 86 on the mathematics test and 89 on the reading test.
  • For a period of three (3) years from the date of testing, a student who is tested and performs on the Eleventh grade exit-level Texas Assessment of Knowledge and Skills (TAKS) with a minimum scale score of 2200 on the math section and/or a minimum scale score of 2200 on the English Language Arts section with a writing subsection score of at least 3, shall be exempt from the assessment required under this title for those corresponding sections.
  • A student who has graduated with an associate or baccalaureate degree from an institution of higher education.
  • A student who transfers to an institution from a private or independent institution of higher education or an accredited out-of-state institution of higher education and who has satisfactorily completed college-level coursework as determined by the receiving institution.
  • A student who has previously attended any institution and has been determined to have met readiness standards by that institution.
  • A student who is enrolled in a certificate program of one year or less (Level-One certificates, 42 or fewer semester credit hours or the equivalent) at a public junior college, a public technical institute, or a public state college.
  • A student who is serving on active duty as a member of the armed forces of the United States, the Texas National Guard, or as a member of a reserve component of the armed forces of the United States and has been serving for at least three years preceding enrollment.
  • A student who on or after August 1, 1990, was honorably discharged, retired, or released from active duty as a member of the armed forces of the United States or the Texas National Guard or service as a member of a reserve component of the armed forces of the United States.

Documentation of exemption is required; students may be asked to provide test scores, transcripts, military documents, etc., in order to claim exemption. Contact the School Representative for more information.

What will an AAS degree do for me?

  • If you plan to run your own business someday it will increase your chances of success and profitability.
  • It will enhance your resume, and make you more employable.
  • It will improve your general education, management and communication skills, which are very important for a modern chef.
  • It will help you move up faster on the corporate ladder.

Why receive my AAS degree at the Culinary Institute Alain & Marie LeNôtre?

  • Because after graduation with a CIAML diploma you will have already earned 15 to 20 weeks of credit.
  • Because the CIAML offers more hours (clock and credit) at a lower cost than the competition.
  • Because the AAS degree at the CIAML is fast track with 60 weeks, as compared to 104 weeks in most schools. 60 weeks minus your credit is even less than the competitors.

How much will it cost?

  • Because of our low overhead and fast track program, our AAS degree cost is less than the competition. Consult our school representative to compare prices.
  • Fast track means when you graduate you will start earning money sooner and save on the cost of attendance because you will be in school for fewer months.

How do I pay for it?

  • There are even more scholarships available for an AAS degree than for a diploma.
  • The CIAML SEOG allocation for 2006-2007 increased, qualified students may earn up to $1,000 year.
  • The on-campus job program allocation also increased. Qualified students have the opportunity to work on campus.
  • There are grants, federal loans, private loans and payment plans for those who qualify.

What if I am seeking a bachelor's degree/further education?

Culinary Institute Alain & Marie LeNĂ´tre (CIAML) has successfully developed an articulation agreement with the University of Houston, Conrad Hilton College to allow our students to transfer credits from courses designated as approved. Here students can go beyond an associates degree without retaking courses. The approved courses are as follows:
